Cooking Corner - Guacamole
In my home, anytime is a good time for Guacamole. Perfect entertainment dip. And we’re going to use it to make a great Brunch item. I bought a bag of ripe Avocados for a good price, so that’s what’s up with this recipe at this time.
I made a double batch. Lots for sharing as a Dip and saved some for next morning Brunch. In our home there’s no such thing as left over Wine or Guacamole.
I actually amazed myself with this one!
GUACAMOLE and AVOCADO TOAST AND EGGS
1 Batch – enough for 4 people to share as a snack – multiply recipe if you like, you’ll need it for brunch in the morning.
GUACAMOLE
Ingredients:
3 Avocados
½ small Yellow Onion diced finely or ¼ large onion – How much do you like onion? My wife said too much. Our neighbour/guest/taste tester said perfect. Happy wife, happy life. Do what’s right for your household.
2 Roma Tomatoes finely diced – you do not want wet tomatoes. Water is the enemy. I had small Cherry Tomatoes that I used up. Once diced, I dried them in paper towels.
3 Tbsp finely chopped Fresh Cilantro.
1 Jalapeno pepper, seeds removed, finely diced. It’s the seeds that are hot, the flesh adds a small zing that is necessary to Guacamole.
2 Garlic Cloves minced
1 Lime juiced or 1 Tbsp Lime Juice. TASTE. I added a bit more.
½ Tsp coarse salt. I used Sel de Mer / Sea Salt.
Method:
1. Slice the Avocados in half, remove the pit, scoop into a mixing bowl.
2. Mash the Avocado with a spatula and fork – chunky or smooth – make yourself happy.
3. Add the other ingredients and stir together. TASTE. Add more to spice it up if you want. To make it milder, add another avocado. Serve with Nacho chips and maybe Salsa and Queso cheese.
AVOCADO / GUACAMOLE TOAST

Ingredients:
Guacamole
Toast – I used unsliced Belgian Loaf, medium-dense bread bought locally – Slices of bread cut thick ½ inch.
Bacon cooked and chopped roughly. I broil bacon in the oven on a baking sheet covered in foil wrap. 2 minutes per side and then 1 minute a side until it’s at your preferred crispiness. Watch carefully – you’re broiling. It goes fast. In this case you can watch the pot boil.
Feta crumbled.
1 Egg per piece of Toast per person.
Method:
1. Toast the bread - spread generous amount of Guacamole. Cut the Toast in half and shingle it.
2. Cook Eggs sunny side up. If you want to set the eggs more quickly, then under the broiler. Watch carefully. When cooking a fried egg, I like over medium. However, for this dish I strongly suggest runny yolk sunny side up. Try it. It’s fantastic.
3. Place cooked egg over top of the shingled Guacamole Toast.
4. Sprinkle Bacon and Feta on top. Sprinkle chopped green onion last. You’re done. Enjoy.
Avocado Toast recipes usually just use plain avocado spread on bread and then with eggs or other toppings. Where’s the fun in that? Bland. Guacamole adds a whole different complexity of delicious flavour. Again, enjoy.
